Gluten-Free Doesn’t Mean Taste-Free: Yummy Gluten-Free Double Chocolate Cake Recipe!

What’s the first thought that comes to your mind when you see a gluten-free product? It’s probably something along the lines of “Meh…it’s definitely not going to be as good as the original!” So, what do you do? You ignore it and proceed to purchase your usual yummy dessert, despite knowing it could have some potential benefits for your health. Well, guess what? There’s a new cake in town that might just make you think twice the next time you see a gluten-free product! It’s a gluten-free double chocolate cake!

To prepare for this yummy cake, you’ll need two 9-inch baking pans. Ingredients:

  • cooking spray
  • 3 cups gluten-free all purpose baking flour
  • 2 cups white sugar
  • 1/3 cup cocoa powder
  • 1 cup semisweet chocolate chips
  • 2 1/4 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoons xanthan gum
  • 1 1/2 cups mayonnaise
  • 1 1/2 cups hot water
  • 1 1/2 teaspoons vanilla extract

Directions

  1. Preheat oven to 350 degrees F(175degreesC). Spray two 9-inch cake pans with the cooking spray.
  2. Combine flour, sugar, cocoa powder, baking powder, baking soda, and xanthan gum in a large bowl; stir in mayonnaise until well mixed. Gradually pour in hot water and vanilla extract; stir until smooth. Add chocolate chips last and then stir. Spoon the batter into the prepared cake pans.
  3. Bake in the preheated oven for about 30 minutes or until a toothpick inserted in the center of the cake comes out clean and the cake slightly pulls away from the sides of the pan.
  4. Cool the cake in the pans for 10 minutes before removing to cool completely on a cake rack.
  5. Once the cake has cooled, ice it with your favorite gluten-free icing.
